Order your choice of Il Buco Alimentari cured meats and schedule a pickup from the Alimentari counter. Our salumi is cured in house using no artificial preservatives of any kind. 

Coppa: neck muscle, cured 6 months in cajun pepper, smoked paprika, sea salt, espelette

Lonza: loin of the pig, cured for 6 months in cajun pepper, fennel pollen, smoked paprika, sea salt

Pancetta: pork belly cured for 3 months with sweet spices

Finocchiona: lean pork shoulder salame grinded with back fat, plack pepper, cracked fennel seed, wild fennel pollen, cayenne, garlic, and white wine
