Anchovy Filets in Extra Virgin Olive Oil. Baldo Scalia is a top anchovy producer. It was founded in 1973 by Benedetto Scalia in Sciatica Therme, a city known for its fishing fleet. The anchovies are caught between March and July when their flesh is most plump before being cleaned by hand and cured in barrels with sea salt and water for several months.
