Description: This artisan vinegar is made from organically grown Trebbiano and Lambrusco Grasparossa grapes. Traditional balsamic vinegar is made from the grape must (unfermented juice), which is boiled before yeast is added to turn the must into vinegar through fermentation. It is then aged in wood barrels. This is a dark brown, luminous vinegar with a flavorful bouquet and bittersweet taste. It spends its first two years aging in oak barrels before spending 8 years moving through several distinctive wood barrels which each lend a unique flavor to the vinegar.
Culinary Pairings: Delicious over shards of reggiano parmesan, salads, grilled game, or over vanilla ice cream, panna cotta, or fresh strawberries.
